I have finally found my perfect go-to salad for the Summer!
About 2 months ago, while visiting my parents, I made a salad and a spur of the moment salad dressing to go with it. Immediately, my dad commented that the salad was delicious and different from his usual dressing. It surprised me and made me very happy as he is a typical meat and potato kind of man. At that moment, I knew I had a winner and voilà, it became my new favorite salad.
Unlike some stereotypes that salads are not a meal but a side dish, well, clearly they haven’t had one of mine! I truly enjoy eating a veggie packed and very flavorful salad. It makes me feel good especially knowing that I’ve eaten almost my daily dose of veggies. I prefer to eat my vegetables raw as that is when you get the most nutrients. The only thing is that it takes longer to clean and cut the vegetables and salad dressing but well worth it in the end!
Honestly, I have been searching through many online recipes to find a salad that was the right fit.
I like to experiment with different flavors and have been searching for a new refreshing green lettuce salad recipe. I have to admit that I was inspired by this salad dressing from another fellow food blogger Tieghan from Half Baked Harvest who’s salads recipes are also AMAZING!
She used fresh ginger, soy sauce and honey which I also added to my salad dressing since I absolutely loved the sweet and savoury mixture. Olive oil, balsamic vinaigrette, salt and pepper got old and I needed a major update.
So here it is, I hope that you will enjoy it as much as I do.
- Salad:
- 1 small romaine or green lettuce
- 1/2 chopped red pepper
- 1 medium grated carrot
- 1/2 sliced avocado
- 1/2 chopped fennel
- 1/2 chopped broccoli head
- 1/4 chopped english cucumber
- a handful of sunflower seeds
- .
- Salad Dressing:
- 2 tbsp basil extra virgin olive oil
- 1 tbsp balsamic vinaigrette
- 1 tbsp lemon juice
- 1/2 tbsp soy sauce
- 1/2 tbsp soft honey
- 1-2 small minced garlic cloves
- 1/4-1/2 tsp fresh grated ginger
- Salt to taste
- Sprinkle with ground caraway seeds ****see below notes
- Sprinkle with hemps seeds (optional)
- Salad:
- Wash/Dry the lettuce then chop into bite size pieces.
- Prep the vegetables for the salad (grated or chopped as indicated).
- Mix together in a large bowl.
- Salad Dressing:
- Mix all ingredients and blend well.

Caraway Seeds, what is that you say?
I have been using more and more of this spice since it is in a lot of mediterranean dishes which I often cook for my partner. Caraway seeds or ground caraway seeds has an aromatic flavour that is close to fennel seeds but with warm and sweet undertones. It is an excellent source of fiber and minerals such as calcium, magnesium, iron and copper to only name a few.
I also found online that it is included in some mouthwashes, yep, so with the garlic in the dressing it helps to give the salad a fresher taste.
