This is my go-to 30 minute quick and easy, get the food on the table right now recipe.
The inspiration for this dish is from my hubby’s North African origins and one of his favorite dish. He always asks for a sauce with any and every meal, while I rather used to dislike them. Over the years, I have experimented with his cultural recipes and have made a lot of similar versions of this well known North African Shakshuka.
What is Shakshuka?
Shakshuka basically consists of a simple tomato sauce with spices, oignons, green peppers, sometimes adding merguez (sausage) but always adding a few eggs directly in the sauce to cook on top. It can easily be a breakfast dish with toast or a quick lunch but we usually have it for dinner.
My version is something I did a few weeks ago when I had a case of ”ahh, I have to make something quickly, let’s see what’s in the fridge”. All the while having a baby that’s pulling on my leg and a toddler running around.
When you don’t want to think about it, this is a throw everything in a pot kinda meal. You can’t mess it up, even if you don’t follow the recipe.
Saffron is the most expensive spice in the world so if you are buying the real one then only add a pinch. However, I bought mine in Istanbul last Summer and they sold us a large bag of a more affordable imitation Saffron which is bitter so in this case I added 1-2 tsp.
I removed the eggs but then my man adds them because according to him you cannot make this version without eggs….so basically this dish is very versatile.
This is best served with warm toasted baguettes or any other sliced bread. Have no fork on hand, no problem, it is trationnally eaten without. Trust me, the kids love this part!
MEAT-FREE RECIPE*** Remove the sausages if you don’t want any meat. On it’S own, the veggies with the olive oil and spices is also delicious!
